So by "Cha ko", do you mean black cardamom? Looks like black cardamom in the photo, but no mention in the ingredients, except, maybe, that's the the "cha-ko".

I just returned from a month in thailand and had some amazing khao soi in Chiang Mai. Cha Ko, i can't find anything on. Is there a synonym or perhaps different spelling? I'd love some help with this one, also if you know where I can find citrus prickly ash i'd love some help on that one as well.

Thank gods I finally found a recipe for my favorite soup of all time. I was making my own version up until now. I always imagined there would be peanut paste and fish sauce in there some where.

I have seen (and tried) many variations of this amazing soup, like many red curries this dish is often abused due to the treatment of the coconut cream..it should always be freshly made and itshould always crack before you place the paste in, the paste needs to fry in the coconut oil and not be boiled in coconut cream. Also, you gotta have the fried noodles on top!
